T1 - Shiitake mushroom (Lentinus edodes (Berk.) Singer) extract enhances the growth of lactic acid bacteria and bifidobacteria in vitro

N2 - The objective of this study was to investigate the effect of the mushroom extract on the growth of lactic acid bacteria and bifidobacteria. Lactobacillus reuteri CF2-7F, L. reuteri DMS20016, Bifidobacterium breve and B. adolescentis were tested with different concentrations (0, 1, 2, and 4% w/v) of mushroom extract. Bacterial growth was monitored every two hours by measuring optical density, pH, and titratable acidity. Results showed that the growth of the strains tested was significantly enhanced by increasing concentrations of mushroom extract (p <0.05). CF2-7F grown on MRS medium with 4% shiitake mushroom extract had the highest log cfu/ ml compared to the control during 8 h incubation. The presence of mushroom extract enhanced the growth of lactic acid bacteria and bifidobactria as observed by rapid acid production. Results suggest the potential use of shiitake mushroom extract as a natural additive to food products to improve the growth of lactic acid bacteria and bifidobacteria.
